About three years ago I concocted a recipe which fits my criteria of healthy with a side of easy. I made it often over the next few years as it was a Bunny Haven Manor East favorite. Somehow in the shuffle of closing down the original Bunny Haven Manor and moving (thrice), I lost sight of the idea of creating food - pretty, delicious, soul-nourishing food.
Friday night, I was going to a friend's house and said I'd bring something. As my friend has some food allergies, anything purchased baked - my go-to solution - was out. And I realized this recipe, which I'd almost forgotten, is perfect for a muggy summer night! (No soy, no beef, no dairy, no gluten - just fruits, veggies, protein and spices.)
(This does has more than 5 ingredients but since it's just chop and mix, we'll bend the rules just this once!)
- 1/2 onion (I like white), diced
- 15oz can of black beans (rinsed)
- cumin to taste (about 1 tsp)
- jalapeno (I usually use 2), diced
- 1 red pepper, diced
- 2 mangos (the small yellow ones), diced
- chili powder to taste (about 1.5 tsp)
- 2 avocados, diced
- juice of a fresh lime doused over the avocado bits
- 1/2 bunch of cilantro, diced
- salt and pepper
Stir
The order is important. Because it takes a minute or two to chop each new thing, this order gives the spice flavors a chance to mingle and marry where they will do the most good.
This "salad" can be served on its own with a spoon; served with a side of tortilla chips and dipped up like salsa; or served over rice, optional chicken to the side. (Good for breakfast too! Over eggs in a tortilla). It can sit out for an afternoon at a picnic without harm, or come out of the fridge cold to refresh you on a hot day. Best eaten in a day or two, stir before serving.
Take-away - Life changes all the time, and sometimes we lose track of pieces of ourselves. What have you forgotten?
